Prideland Lentil-Cucumber Salad
Ingredients
- ½ cup sliced almonds
- 1 Triple Lentil Cucumber Salad recipe
- 2½ DOLE® Carrots, 1 shredded, 2 cut crosswise into ¼-inch pieces
- 2 Roma tomatoes, chopped
- 1 cup DOLE® Cauliflower florets
- 1 cup coarsely crushed multigrain pita chips
- ½ cup cubed English cucumber
- ½ cup drained and rinsed low sodium chickpeas
- ¼ teaspoon kosher salt
- ½ cup pomegranate arils
Directions
- Toast almonds in a large skillet over medium heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.

Toss salad, carrots, tomatoes, cauliflower, pita chips, cucumber, chickpeas and salt in a large bowl; serve sprinkled with pomegranate arils and almonds. Makes about 8¾ cups.
