Middle Eastern Chicken Salad Pita Pockets

Ingredients
- 1 Triple Lentil Cucumber Salad recipe
- ½ small English cucumber, chopped
- 2 cups shredded skinless rotisserie chicken breast
- 6 (6½-inch) whole wheat pita bread rounds, cut crosswise in half
- 1 cup roasted red pepper hummus
Directions
- Toss salad, cucumber and chicken in a large bowl. Makes about 6 cups.
- Spread hummus inside pita bread halves; fill with salad mixture. Makes 6 filled pita pockets.
Tips & tricks
Use leftover skinless roasted turkey or chicken in place of rotisserie chicken.
