Directions

  1. Prepare Chopped Kit as package directs in a large bowl. Add kale, cranberries and cheese, if desired; toss.
  2. Heat oil in a large skillet over medium-high heat. Add sweet potato, salt and pepper; cook 5 minutes or until browned, stirring occasionally. Add vinegar and ¼ cup water; cover and cook 3 minutes or until liquid evaporates and potatoes are tender. Add potato mixture to salad; toss and season with salt and pepper to taste. Makes about 5 cups.
