Directions
- Whisk garlic, lemon juice, yogurt, cucumber, dill and oregano in a small bowl. Makes about ½ cup.
- Heat oil 1 tablespoon oil in a large nonstick skillet over medium heat; add 1 package seitan and cook 5 minutes or until browned, stirring frequently. Repeat with remaining 1 tablespoon oil and 1 package seitan.
- Stack pitas between 2 damp paper towels on a microwave-safe plate; microwave on high 30 seconds or until warm. Serve seitan in pitas topped with tomatoes, onion, spring mix and cucumber mixture.
