Directions

  1. Preheat oven to 400°F. Line 2 rimmed baking pans with parchment paper; spray with nonstick cooking spray. Spread bananas on 1 prepared pan. Spread walnuts on 1 side of second prepared pan; spread oats on opposite side. Roast bananas 20 minutes or until golden brown and caramelized; toast walnuts and oats 5 minutes or until fragrant.
  2. Pulse walnuts in a food processor 10 seconds or to coarse crumbs; transfer to a shallow bowl. Pulse coconut chips, cream cheese, cashews, flaxseed, syrup, vanilla extract, bananas, and oats in food processor 1 minute or until a ball forms. Makes about 1 1/2 cups.
  3. Line a rimmed baking pan with parchment paper. Roll banana mixture into 1- to 1 1/4- inch balls; roll in walnuts to coat and place on prepared pan. Freeze 15 minutes or until firm. Makes 14 bites.
