Directions

  1. Thread shrimp onto each skewer.
  2. Combine lemon juice and oil in a small bowl. Brush mixture over the shrimp.
  3. Spray grill with olive oil spray. Grill shrimp skewers and pineapple over medium-high heat for 3 minutes on each side or until the shrimp is cooked through and the pineapple slices are charred.
  4. Spray lettuce lightly with olive oil spray and place cut side down on grill. Cook for 2 minutes or until golden brown.
  5. Remove shrimp, pineapple and lettuce from grill. Remove shrimp from skewers and chop the pineapple into chunks. Set aside.
  6. Place lettuce onto large platter and drizzle with dressing. Top with shrimp, pineapple and slices of avocado.
