Sweet Skillet Chicken with Grapes

Directions
- Position oven rack about 6 inches from source of heat; preheat broiler to high. Heat 1 tablespoon oil in a cast-iron or oven-safe skillet over high heat. Add chicken and sprinkle with salt and pepper; cook 3 minutes or until browned, stirring occasionally.
- Arrange chicken around edge of skillet; place cheese in center of skillet. Add grapes and onion over chicken; drizzle cheese and chicken mixture with 3 tablespoons lemon juice and zest, honey and remaining 1 tablespoon oil. Transfer skillet to oven; broil 10 minutes or until cheese is browned and internal temperature of chicken reaches 165°F. Break up cheese with side of a spoon.
- Prepare farro as label directs; stir into skillet. Makes about 8 cups chicken mixture.
- Toss arugula and remaining 1 tablespoon lemon juice in a small bowl.
5. Serve chicken mixture alongside arugula mixture sprinkled with pistachios.

- ¼ cup chopped roasted unsalted pistachios
