Sweet Potato and Turkey Hash

Directions
- Heat the olive oil in a large nonstick skillet over medium-high heat.
- Add the sweet potato and cook for 10 minutes, stirring frequently, until it begins to brown. Add the bell pepper, onion and Creole seasoning. Reduce heat to low and cook for 5 minutes longer until vegetables soften. Add the turkey and cook until turkey is warmed through.
- Sprinkle parsley on top and serve with hot sauce, if desired.
