Directions
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add sausage; cook 4 minutes or until browned, stirring frequently. With slotted spoon, transfer to a plate.
- Heat remaining 1 tablespoon oil in same skillet over medium heat. Add sweet potatoes and thyme; cook 5 minutes or until starting to brown, stirring frequently. Add vinegar and ⅓ cup water; cover and cook 6 minutes or until potatoes are tender and liquid has evaporated, stirring occasionally. Stir in apple, Brussels sprouts and sausage; cook 2 minutes or until Brussels sprouts are wilted. Makes about 6 cups.
- Serve hash sprinkled with onions.
