Directions

  1. Preheat oven to 450°F. Spray rimmed baking pan with nonstick cooking spray.
  2. Heat plantains on a microwave-safe plate in microwave oven on high 6 minutes or until tender. Stand each plantain half upright on work surface; press down with bottom of a glass to flatten and place on prepared pan. Spray both sides of plantains with nonstick cooking spray; sprinkle with seasoning. Bake plantains 20 minutes or until golden brown, turning once.
  3. Toss slaw, onion, chicken, cheese and cilantro in a large bowl. Top 6 plantains with slaw mixture and remaining 6 plantains.
