Directions
- Purée blueberries, 2 tablespoons honey, 1 teaspoon lemon juice and 2 tablespoons water in a blender on high until smooth; transfer to a small saucepan. Repeat process twice with raspberries then strawberries with remaining honey and lemon juice, and water, to make raspberry and strawberry mixtures, transferring each to a separate small saucepan.
- Heat blueberry, raspberry and strawberry mixtures over medium heat 5 minutes or until thickened; remove from heat and strain mixtures separately into 3 small bowls. Loosely cover bowls with plastic wrap; refrigerate 2 hours. Makes about ¾ cup each blueberry, raspberry and strawberry mixtures.
- Blend ice, in 4 batches, in a blender on high until “shaved,” transferring each batch to a medium bowl and freezing between batches. Makes about 8 cups.
- Divide shaved ice into 8 (8-ounce) cups; drizzle with desired fruit mixtures.
