Directions

  1. Heat 1 teaspoon oil in a large skillet over medium heat. Add bacon and mushrooms; cook 6 minutes or until mushrooms are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted, stirring occasionally. Transfer to a small bowl; cover to keep warm.
  2. Heat remaining 1 teaspoon oil in same skillet over medium heat. Add egg; cover and cook 3 minutes or until egg white is cooked through and yolk is slightly soft.
  3. Stir egg white, oats and milk in a microwave-safe bowl; microwave on high 2 minutes or until softened. Makes about 1 cup.
  4. Serve oatmeal topped with bacon mixture, egg, cheese and seasoning.
