Directions
- Heat a medium sauce pot of water to a boil over high heat; add potato and cook 10 minutes or until very tender. Drain potato; cool.
- Purée all ingredients in a blender on high until smooth; serve garnished with pineapple and chia seeds, if desired. Makes about 6 cups.
