Directions

  1. 1. Preheat the Oven:

Preheat your oven to 350°F. Grease a loaf pan and line with parchment paper.

    2. Mix the Dry Ingredients:

In a large bowl, whisk together the oat flour, almond flour, rice flour, tapioca flour, baking powder, baking soda, salt, cardamom and nutmeg.

    3. Prepare the Flax Eggs:

In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir and let sit for 5 minutes to thicken.

    4. Prepare the Wet Ingredients:

In a blender, blend the pineapple until smooth.
In another bowl, combine the blended pineapple, mashed bananas, flax eggs, maple syrup, melted coconut oil, vanilla and almond extracts, and the lime zest. Mix until well combined.

    5. Combine the Ingredients:

Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to over mix. If using mix-ins, fold them into the batter to combine.

    6. Bake:

Pour the batter into the prepared loaf pan. Smooth the top with a spatula. www.homemadecooking.com
