Peanut Butter Glazed Plaintains

Directions
1. Heat oil in a large skillet over medium heat. Add onion; cook 5 minutes or until tender, stirring occasionally. Add garlic and chili pepper; cook 1 minute or until fragrant, stirring frequently. Reduce heat to low. Add plantains and black pepper; cook 8 minutes or until lightly browned, stirring occasionally. Add peanut butter; cook 2 minutes or until melted, stirring occasionally.
2. Serve plantains with bread and/or rice, if desired.
