Directions

  1. Crush peppers in a small sealed zip-top plastic bag with a rolling pin to fine crumbs.
  2. Toss slaw, garlic, corn, cilantro, 1 tablespoon cheese, lime zest and crushed peppers in a large bowl. Makes about 4½ cups.
  3. Serve slaw sprinkled with cilantro and remaining 1 tablespoon cheese along with lime wedges, if desired.
