Directions

  1. Combine salad blend, apple slices, dried apples, cheese and pistachios in large bowl. Toss with Maple Vinaigrette, until coated as desired. Season with salt and pepper, to taste.

Maple Vinaigrette: Whisk together 2 tablespoons finely minced shallot, 1/4 cup apple cider vinegar, 3 tablespoons pure maple syrup, 2 tablespoons canola oil, 1 teaspoon Dijon mustard, a pinch of crushed red pepper flakes and salt. Makes about 1/2 cup.
