Plain and simple, lemon and blueberry are just one of those combinations that works, which is why you find the pairing in everything from muffins to milkshakes. For this salad we bring this dynamic duo together with crisp iceberg and romaine lettuces, red cabbage, sweet carrots and an aromatic trio of green onion, celery and red bell pepper. Add diced cooked chicken breast (rotisserie chicken from your market will speed things up) and our Low-Fat Lemon Blueberry Dressing, and you’ve got a light and refreshing meal for two in about 20 minutes.
Directions
- Gently blend all ingredients together and serve over greens. Top with dressing.
Low-fat Lemon Blueberry Dressing: Mix together 3/4 cup fresh or frozen blueberries, 1/4 cup low-fat lemon yogurt, 1 tablespoon reduced-calorie mayonnaise and 1 teaspoon salt until well blended.
