Directions

  1. Heat oil in large nonstick skillet over medium-high heat. Stir in red pepper and garlic, cook for 1 minute. Stir in green onions and curry powder; cook for 1 minute.
  2. Add spinach in batches, stirring until wilted before adding more. Stir in yogurt, pepper, and salt; bring to a boil, remove from heat, serve.
