Hidden Banana Caramelized Onion Stuffing

Directions
- Preheat oven to 375°F; spray a 13 x 9-inch baking dish with nonstick cooking spray.
- Heat buttery spread in a large skillet over medium heat; add onions and 2 tablespoons water. Cover and cook 5 minutes, stirring occasionally; uncover and cook 5 minutes or until very tender, stirring occasionally. Add bananas and 3 tablespoons water; cook 5 minutes or until onions and bananas are golden brown, stirring occasionally. Add carrots, sage, thyme, salt and pepper; cook 5 minutes or until carrots are tender, stirring occasionally.
- Whisk egg in a large bowl. Add buns, stock and vegetable mixture; toss. Gently press bun mixture into prepared dish; cover with foil and bake 45 minutes. Remove foil; bake 10 minutes or until top is lightly browned and crisp. Sprinkle with parsley. Makes about 6 cups.
