Directions

  1. Preheat oven to 400°F.
  2. Spread cauliflower, broccoli, and Brussels sprouts on a large baking sheet. Add oil and stir to coat vegetables.
  3. Roast for 25 to 30 minutes, stirring vegetables halfway through, or until tender and lightly browned. Remove from the oven and allow to cool.
  4. Empty salad greens from salad kit into a large salad bowl. Add croutons, cheese, and dressing from salad kit packets to salad. Add roasted vegetables to salad. Gently toss to coat.
