Directions
- Preheat oven to 400°F.
- Spread cauliflower, broccoli, and Brussels sprouts on a large baking sheet. Add oil and stir to coat vegetables.
- Roast for 25 to 30 minutes, stirring vegetables halfway through, or until tender and lightly browned. Remove from the oven and allow to cool.
- Empty salad greens from salad kit into a large salad bowl. Add croutons, cheese, and dressing from salad kit packets to salad. Add roasted vegetables to salad. Gently toss to coat.
