Grilled Chile Lime Banana-Sweet Potato Skewers

Directions
1. Stir potato and 2 tablespoons water in a large microwave-safe bowl; cover with plastic wrap and heat in a microwave oven on high 5 minutes or until slightly tender, stirring after 2 1/2 minutes.
2. Whisk lime juice, oil, honey and seasoning in a medium bowl. Makes about 2/3 cup.
3. Place bananas and potato in a large zip-top plastic bag; add lime juice mixture. Seal bag, pressing out excess air; massage banana mixture in bag to coat and refrigerate 30 minutes. Soak skewers in water 20 minutes.
4. Prepare outdoor grill for direct grilling over medium heat. Remove bananas and potatoes from marinade; reserve marinade. Thread 1 piece potato, 1 slice banana and 1 piece potato onto each skewer. Place skewers on hot grill rack; cover and cook 15 minutes or until potatoes are tender, brushing with reserved marinade and turning 1/3 turn every 5 minutes. Makes 16 skewers.
5. Serve skewers with remaining reserved marinade for dipping, if desired.
