Curried Cauliflower Fritters

Directions
- Preheat oven to 400°F. Lightly coat baking sheet with cooking spray.
- Combine cauliflower, zucchini, chickpeas, corn, eggs, almond meal, cilantro, curry powder, cumin, and pepper in large bowl until mixed.
- Form into 12 patties. Place on prepared baking sheet.
- Bake 10 minutes, remove baking sheet and turn patties over, continue baking 10 more minutes or until lightly browned.
- Stir together yogurt and Sriracha until blended. Prepare DOLE® Mango Sriracha Slawesome Kit.
- Serve fritters with salad and Sriracha dipping sauce.
Air-Fryer Method — Preheat air fryer to 390°F. Coat the patties with cooking spray. Place the patties in a single layer in the air fryer basket, making sure they do not overlap or touch. Air-fry 12 minutes, flipping the patties after 6 minutes. Repeat with remaining patties.

- 2 eggs
- 1 cup almond meal
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- ½ teaspoon lemon pepper
- ¾ cup fat-free plain Greek yogurt
- 1 tablespoon Sriracha sauce
- 1 pkg. (11.1 oz.) DOLE® Mango Sriracha Slawesome Kit
