Directions

  1. To prepare Parmesan straws: In 12-inch, non-stick skillet over medium-high heat, sprinkle 1 tablespoon of the Parmesan on the bottom of the pan. As it starts to melt, use a spatula to form it into three, 3-by-5-inch strips. When the cheese starts to bubble and turn golden brown, sprinkle with a pinch of chopped parsley. Remove pan from the heat. Let cool for 4 to 5 minutes. The rectangles should be pliable. Pick up one end of a strip with a pair of tongs and roll the piece to form a straw. Repeat the entire process with the remaining cheese. Set aside on a plate.
  2. To prepare salad: In a large bowl, combine all salad kit ingredients and toss well. Transfer to 4 or more glass cups.
  3. Insert one Parmesan straw into each glass.
