Directions

  1. Preheat oven to 450°F. Line a rimmed baking pan with parchment paper. Toss sweet potatoes and oil in a large bowl; spread on prepared pan. Roast potatoes 25 minutes or until lightly charred.
  2. Toast hemp hearts in a small skillet over medium-low heat 5 minutes or until golden brown and fragrant, stirring occasionally.
  3. Prepare Chopped Kit as package directs in a large bowl; fold in chickpeas, onion and sweet potatoes. Makes about 8 cups.
  4. Serve salad garnished with hemp hearts and lemon wedges.
