The green valleys of California have long been known for fresh produce and fruits, such as peaches, but only in recent years have they become a home to vast blueberry farms. Our California Summer Salad celebrates the culinary cornucopia that is the Golden State: fresh, tender greens tossed with sweet sliced peach and plump blueberries, plus crumbled feta, toasted pine nuts and sliced DOLE® Green Onion for some savory notes. Our white balsamic dressing is just what you’d expect to be served on a salad at one of the many fine restaurants that have popped up along with vineyard tasting rooms throughout the state. Directions
- Combine salad, peach, cucumber, blueberries, feta cheese, pine nuts and green onions in large bowl.
- Toss with White Balsamic Vinaigrette, to taste.
- Refrigerate any remaining dressing.
White-Balsamic-Vinaigrette: Whisk together 2/3 cup olive oil, 1/4 cup white balsamic vinegar, 2 tablespoons lemon juice, salt and ground black pepper, to taste, until blended.Makes about 1 cup.

- 2/3 cup chopped cucumber
- 1/2 cup blueberries
- 1/2 cup crumbled feta cheese
- 1/3 cup pine nuts, toasted
- 1/4 cup sliced DOLE® Green Onions
- White Balsamic Vinaigrette (recipe below)
