Blue Corn Moon Plantain Fritters

Directions
- Mash avocado, lime juice, yogurt and ½ teaspoon salt with a fork in a medium bowl. Makes about 3/4 cup.
- Stir plantain, corn, onion, pepper, flour, cilantro and remaining ¾ teaspoon salt in a large bowl. Makes about 1¾ cups.
- Heat 1½ tablespoons oil in a large nonstick skillet over medium-high heat; add 6 (2-tablespoon) mounds of plantain mixture. Cook fritters 4 minutes or until golden brown, turning once; transfer to plate. Repeat with remaining 1½ tablespoons oil and plantain mixture to make 6 more fritters. Makes 12 fritters.
- Serve fritters topped with avocado mixture.
