This recipe creates a delicious, healthy alternative to cheesecake that is perfect for a light dessert offering.
Directions
- Place all ingredients for the crust into a food processor and blend until it resembles breadcrumbs (do not over blend). Remove from the processor and spoon the crust mixture into twelve glasses.
- Blend macadamia nuts, vanilla extract, lemon juice, banana and honey in food processor until smooth. Remove half of the filling mixture and divide among the glasses covering the crust.
- Add half the blackberries and the maple syrup to the remaining filling mixture and blend until smooth. Spoon this mixture on top of the filling; decorate each glass with remaining fresh blackberries.
- Chill in the refrigerator for at least one hour before serving.
