Directions

  1. Place all ingredients for the crust into a food processor and blend until it resembles breadcrumbs (do not over blend). Remove from the processor and spoon the crust mixture into twelve glasses.
  2. Blend macadamia nuts, vanilla extract, lemon juice, banana and honey in food processor until smooth. Remove half of the filling mixture and divide among the glasses covering the crust.
  3. Add half the blackberries and the maple syrup to the remaining filling mixture and blend until smooth. Spoon this mixture on top of the filling; decorate each glass with remaining fresh blackberries.
  4. Chill in the refrigerator for at least one hour before serving.
