Banana Sweet Potato Puff

Directions
1. Preheat oven to 375°F; spray 1½-quart casserole or soufflé dish with cooking spray. Pierce potatoes all over with a fork; place on a rimmed baking pan and bake 50 minutes or until easily pierced with a knife. Cool potatoes 10 minutes; peel and chop.
2. Beat eggs, bananas, sugar, cinnamon, nutmeg and potatoes in a large bowl with mixer on medium-high speed 3 minutes or until almost smooth; spread in prepared dish. Bake puff 35 minutes or until heated through.
3. Serve puff garnished with banana slices and/or parsley, if desired.
