Directions

  1. Cook chickpea liquid in a small saucepan over medium-high heat 8 minutes or until reduced by 1/2; cool completely. Beat chickpea liquid, cornstarch, sugar, and vanilla extract in a medium bowl with mixer on high speed 10 minutes or until smooth, glossy peaks form. Makes about 1 cup.
  2. Place oven rack 4 to 5 inches from broiler; preheat broiler to high. Place bread on rimmed baking pan; broil 2 minutes or until lightly toasted, turning once. Top with chocolate chips and banana slices; sprinkle with cinnamon. Dollop chickpea meringue over each toast; watching carefully, broil 20 seconds or until meringue is lightly browned. Sprinkle with graham cracker crumbs or almonds, if desired.
