Directions
- Preheat oven to 350°F. Spray 9 x 5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk flour, baking powder, cinnamon and baking soda. In a large bowl, mash bananas and avocado with the back of a fork; whisk in egg whites, 3 tablespoons sugar and vanilla extract. Whisk flour mixture into banana mixture just until combined; pour batter into prepared pan.
- Stir pecans, oats and remaining 1 tablespoon sugar in a small bowl; sprinkle over batter. Bake loaf 40 minutes or until toothpick inserted in center comes out clean; cool completely in pan on wire rack. Cut into ¾-inch-thick slices.
