Banana Mojito Mocktail

Directions
1. Purée lime juice, banana, honey and 1/4 cup water in a blender on high until smooth. Strain lime juice mixture through fine-mesh strainer into a small bowl, pressing gently with back of spoon to extract juice; discard solids.
2. Muddle mint leaves and banana juice mixture in a cocktail shaker with muddler or wooden spoon handle; fill shaker halfway with ice, cover and shake vigorously. Makes about 2/3 cup.
3. Fill 4 (12-ounce) glasses with ice; strain mint mixture into glasses. Top each with 1 to 2 ounces sparkling water; garnish with lime wedges and mint sprigs, if desired.
