Air-Fried Yuca with Vegan Banana-Habanero Crema

Directions
1. Line a rimmed baking pan with paper towel. Heat yuca and enough salted water to cover by 2 inches to a boil in a large sauce pot over high heat; reduce heat to medium and simmer 5 minutes or until fork-tender. Drain yuca; spread on prepared pan and pat dry with paper towel. Transfer yuca to a large bowl; spray with nonstick cooking spray and sprinkle with 1/4 teaspoon salt.
2. Preheat 3-quart air fryer to 400°F for 5 minutes. Add yuca to air fryer, in 2 batches if necessary; air fry 15 minutes or until crisp and golden brown, shaking often. Makes about 6 cups yuca.
3. Purée banana, pepper, sour cream alternative, lime juice and remaining 1/4 teaspoon salt in a blender on high until smooth. Makes about 1 1/4 cups crema.
