Ingredients

  • Nonstick cooking spray
  • 6 ripe DOLE® Plantains, peeled and cut crosswise in half
  • 1 1/2 tablespoon reduced sodium fajita seasoning
  • 1 package (11.1 oz.) DOLE® Slawesome!® Fiesta Lime Kit
  • 1/2 small DOLE® Red Onion, thinly sliced
  • 1 1/4 cups shredded skinless rotisserie chicken breast
  • 1/3 cup fat free feta cheese
  • 1/4 cup fresh cilantro leaves

Directions

  1. Preheat oven to 450°F. Spray rimmed baking pan with nonstick cooking spray.
  2. Heat plantains on a microwave-safe plate in microwave oven on high 6 minutes or until tender. Stand each plantain half upright on work surface; press down with bottom of a glass to flatten and place on prepared pan. Spray both sides of plantains with nonstick cooking spray; sprinkle with seasoning. Bake plantains 20 minutes or until golden brown, turning once.
  3. Prepare Slawesome!® Kit as label directs in a large bowl; add onion, chicken, cheese and cilantro, and toss. Top 6 plantains with Slawesome!™ mixture and remaining 6 plantains.
