Thai-tastic Greens Salad
Miso vinaigrette, a delectable dusting of sweet, toasted coconut, creamy avocado, and bright, citrusy pineapple really perk up this bold, Thai-inspired DOLE® Organic Kale Mix salad.
Ingredients
- 1 pkg. (5 oz.) DOLE® Organic Kale Mix
- 1 cup DOLE Tropical Gold® Pineapple, cut into chunks
- 1 avocado, peeled, seeded and chopped
- 1/4 cup cashews or macadamia nuts, coarsely chopped
- 1/4 cup unsweetened coconut, toasted
- Pomegranate seeds, as needed
- Miso Vinaigrette (recipe below)
- Salt and ground black pepper, to taste
Directions
- Place salad blend on large platter or serving plates; top with pineapple, avocado, nuts, coconut and pomegranate seeds. Drizzle vinaigrette over salad. Season with salt and pepper, to taste.
Miso-Vinaigrette: Whisk together 2 tablespoons rice wine vinegar, 1 teaspoon instant miso, 1 teaspoon low-sodium soy sauce, 3 tablespoons canola oil, 1 teaspoon sesame oil, and 1 sliced DOLE Green Onion. Makes about 1/4 cup.
