Spring Chicken Mint Salad
Ingredients
- 2 cups green beans, cut into 1-1/2-inch pieces
- 6 cups DOLE® Spring Mix
- 1 cup shredded cooked chicken breast
- 2 tablespoons crumbled feta cheese optional
- 1/4 cup toasted walnuts, chopped
- 1/2 cup DOLE Red Onion, thinly sliced
- Mint Vinaigrette (recipe below)
Directions
- Boil 3 cups water in saucepan; add green beans and cook for 4 minutes. Drain and chill until cool.
- Combine spring mix, chicken, cheese, walnuts and onion, in large bowl. Toss with mint vinaigrette to evenly coat.
- Mint Vinaigrette: Place 1/4 cup extra virgin olive oil, 1/4 cup fresh mint leaves, 1-1/4 tablespoons white wine vinegar, 1 garlic clove, chopped, 1/4 teaspoon sugar and 1/8 teaspoon salt in blender or food processor. Cover; blend until mint is finely chopped and blended.
