Smoked Salmon and Pineapple Skewers
Ingredients
- 1 package (8 ounces each) cold smoked salmon
- 2 tablespoons hoisin sauce
- 16 (½-inch-thick) slices English cucumber, halved crosswise
- 16 (1-inch) chunks DOLE® Pineapple, halved crosswise
- 16 (6-inch) bamboo skewers
- ½ DOLE® Lemon, juiced (about 2 tablespoons)
- Black and/or white sesame seeds and/or thinly sliced DOLE® Green Onions for garnish (optional)
Directions
1. Brush both sides of smoked salmon with hoisin sauce; cut lengthwise in half, then crosswise into quarters to make 16 pieces.
2. Thread 1 piece each cucumber, pineapple and salmon onto each skewer, repeating cucumber and pineapple once; drizzle with lemon juice.
3. Serve skewers garnished with sesame seeds and/or onions, if desired.
