Ingredients
- Nonstick cooking spray
- 1 DOLE® Carrot, finely chopped
- 1 DOLE® Yellow Onion, chopped
- 1 medium green bell pepper, chopped
- 1 pound 99% lean ground turkey
- 1 cup packed DOLE® Baby Spinach
- 1 tablespoon tomato paste
- ½ cup no sugar added ketchup
- 1 tablespoon less-sodium soy sauce
- 2 teaspoons coconut sugar
- ⅛ teaspoon kosher salt
- 12 whole wheat slider buns
Directions
1. Heat a large nonstick skillet over medium heat; spray with nonstick cooking spray. Add carrot, onion and pepper; cook 5 minutes or until vegetables are tender, stirring occasionally. Add turkey; cook 7 minutes or until browned, breaking up turkey with the side of a spoon. Add spinach; cook 2 minutes or until spinach is wilted, stirring occasionally. Stir in tomato paste; cook 1 minute, stirring frequently. Stir in ketchup, soy sauce, sugar, salt and 1 cup water; cook 5 minutes or until thickened, stirring occasionally. Makes about 3¾ cups.
2. Serve turkey mixture in buns. Makes 12 sliders.

Add ground black pepper, ground cumin, onion powder or smoked paprika along with the salt for an added punch of flavor.
Fill a split English muffin with the sloppy Joe mixture for a high protein breakfast.
