Mexican Street Corn Slaw

Ingredients
- 3 dried chile de árbol peppers
- 1 Fiesta Lime Slaw recipe
- 2 garlic cloves, minced
- 1 ½ cups frozen sweet corn, thawed
- ¼ cup chopped fresh cilantro plus additional for garnish
- 2 tablespoons grated cotija cheese
- 1 tablespoon lime zest
- Lime wedges for serving (optional)
Directions
- Crush peppers in a small sealed zip-top plastic bag with a rolling pin to fine crumbs.
- Toss slaw, garlic, corn, cilantro, 1 tablespoon cheese, lime zest and crushed peppers in a large bowl. Makes about 4½ cups.
- Serve slaw sprinkled with cilantro and remaining 1 tablespoon cheese along with lime wedges, if desired.
