Herb Salmon and Foil Pack Grillers
Ingredients
- 1 DOLE® Homestyle Roasted Herb Sheet Pan Meal Starter Kit
- 4 tablespoons olive oil
- 4 salmon fillets
Directions
- Prepare outdoor grill for direct grilling over medium heat.
- Cut potatoes from1 DOLE® Homestyle Roasted Herb Sheet Pan Meal Starter Kit into quarters.
- Toss vegetables, ½ the seasoning and 2 tablespoons olive oil in a large bowl.
- Divide vegetables onto center of 4 (12-inch-square) sheets of foil.
- For each pack, bring 2 edges of foil up over vegetables and fold to seal.
- Fold sides of foil to seal.
- Place packs, seal side up, on hot grill rack.
- Cover and cook 40 minutes or until vegetables are tender.
- Brush 4 salmon fillets with 2 tablespoons olive oil.
- Sprinkle with remaining seasoning.
- Place salmon on hot grill rack.
- Cover and cook 8 minutes or until internal temperature reaches 145°, turning once.
- Serve salmon with vegetables.
- Makes about 3½ cups vegetables.
