  1. Toast coconut in a large skillet over medium heat 3 minutes or until lightly browned and fragrant, stirring occasionally; transfer to plate to cool. Toss rice and milk in a medium bowl.
  2. Wrap bamboo sushi mat with plastic wrap; place horizontally on work surface. Spread about ⅔ cup rice mixture lengthwise into 8 x 6-inch rectangle over mat with wet hands; place 1 sheet nori lengthwise over rice. Gently brush top and bottom edges of nori with water; place ¼ of each the banana, grapes, pineapple and strawberries lengthwise down center of nori. Starting from long end, use mat to tightly roll rice mixture and nori around filling. Repeat with remaining rice mixture, nori and fruit to make 3 more rolls.
  3. Sprinkle rolls with cashews and coconut; cut each roll crosswise into ¾-inch-thick slices.
