Fresh Fruit Salad with Baby Spinach and Yogurt Poppy Seed Dressing
It’s always a bonus when a dish is as beautiful as it is delicious. That’s most definitely the case with this salad of emerald-green baby spinach studded with jewel-like bites of colorful fresh fruit and drizzled with a creamy poppy seed dressing. The recipe serves two and is well suited for an intimate meal with that special someone, but it’s also very family-friendly (pleasing the pickiest of eaters) and can easily be doubled.

Ingredients
- 1 ½ tablespoons vegetable oil
- 1 to 2 teaspoon water, to thin
- ½ teaspoon poppy seed
- 3 cups DOLE® Baby Spinach Leaves
- ½ teaspoon dry mustard
- ½ teaspoon honey
- 1 tablespoon apple cider vinegar
- 1 DOLE® Banana, sliced
- 1 cup peeled sliced fresh DOLE Tropical Gold® Pineapple
- ⅛ teaspoon salt
- ½ cup DOLE® Raspberries
Directions
- Place vinegar, mustard, honey and salt in small bowl. Whisk in yogurt and oil; stir in poppy seed. Thin with water as needed.
- Arrange spinach on platter or individual plates. Compose fruit on top of salad. Drizzle with dressing.
