DOLE® Fruity Christmas Tree with Cranberry-Ginger Dip
Ingredients
- 1 pound DOLE® Green Grapes
- ½ DOLE® Pineapple, peeled, pitted and cut into 1-inch pieces, plus additional ½-inch cross section
- 36 DOLE® Strawberries, hulled
- ⅓ cup gluten free dark chocolate chips
- 2 teaspoons coconut oil, melted
- ¼ cup desiccated or macaroon coconut
- ¼ cup white chocolate chips
- 1 container (5.3 ounces) vanilla almond milk yogurt alternative
- 1 ripe DOLE® Banana, peeled and mashed
- ¼ cup less sugar dried cranberries, finely chopped
- ¼ teaspoon grated fresh ginger
- 1 (11 x 4-inch) Styrofoam™ cone
- 1 (4-inch) wooden skewer
- 120 toothpicks plus additional for serving
Directions
- Line a rimmed baking pan with parchment paper. Place grapes, pineapple pieces and strawberries in single layer on prepared pan. Heat dark chocolate chips in a small microwave-safe bowl in microwave oven on high 1 minute 20 seconds or until melted, stirring every 20 seconds; stir in oil. Drizzle fruit with chocolate mixture; sprinkle with coconut and refrigerate 20 minutes or until chocolate is hardened.
- Heat white chocolate chips in a medium microwave-safe bowl in microwave oven on high 1 minute 20 seconds or until melted, stirring every 20 seconds; whisk in yogurt, banana, cranberries and ginger. Makes about 1¼ cups.
- Wrap cone in aluminum foil. Cut a star from pineapple cross section using a 3-inch star-shaped cookie cutter; thread star onto skewer. Insert toothpicks into cone to create “Christmas tree branches”; carefully thread grapes, strawberries and pineapple pieces onto toothpick “branches.” Insert pineapple star into top of “tree”; serve with Cranberry-Ginger Dip and additional toothpicks.
