Chipotle Cheddar White Bean Nachos
Nachos are a beloved appetizer and snack because they combine so many flavors and textures—crispy, cheesy, creamy, tangy—you get the picture. For this slightly more sophisticated variation, we keep all those basics, although we substitute delicately flavored white beans for the more traditional earthy black beans. But we really make things exciting by adding another layer of zesty flavors, crunchy texture and coolness (to temper the hot and cheesy beans and tortilla chips) with our convenient Chopped Chipotle & Cheddar Salad Kit. A topping of fresh, flavorful chopped salad also lightens up what can be a somewhat heavy dish. If you want to mix things up even more, use a green tomatillo salsa instead of the traditional red salsa when you’re preparing the hot nacho base.
Ingredients
- 1 tablespoon olive oil
- 1 can (15 oz.) white beans, rinsed and drained
- 1/4 cup cilantro, minced, plus more for garnish
- 1 lime, juiced
- 1 cup DOLE® Red Onion, chopped
- 1-1/2 cups salsa
- 1 bag (13 oz.) restaurant-style tortilla chips
- 2 cups shredded Mexican blend cheese
- 1 pkg. (12.9 oz.) DOLE® Chopped Chipotle & Cheddar Salad Kit
Directions
- Preheat oven to 400°F (205°C). Line a baking sheet with aluminum foil; spray foil with cooking spray.
- Combine olive oil, beans, cilantro, lime juice, red onion and salsa in bowl. Lay tortilla chips in single layer on prepared baking sheet. Scatter bean mixture over chips and cover with cheese. Bake 5 to 7 minutes, or until cheese melts and starts to bubble.
- Combine salad kit ingredients in same bowl used to make bean mixture. Top nachos with salad and garnish with chopped cilantro.
