Chicken Caesar Pasta Salad
Ingredients
- ½ (16-ounce) package whole wheat rotini pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 package (11.3 ounces) DOLE® Premium Ultimate Caesar Kit
- ½ DOLE® Lemon, juiced (about 2 tablespoons)
- ¼ DOLE® Red Onion, thinly sliced
- 1 cup halved cherry tomatoes
Directions
- Prepare pasta as label directs; drain, rinse with cold water and cool.
- Heat oil in a large skillet over medium-high. Add chicken, salt and pepper; cook 7 minutes or until internal temperature reaches 165°F, stirring occasionally. Remove skillet from heat; cool completely.
- Prepare Caesar Kit as package directs in a large bowl; fold in lemon juice, onion, tomatoes, pasta and chicken. Makes about 10 cups.
Tips & tricks
To make this recipe in advance, it can be prepared without the Caesar Kit, covered and refrigerated up to 2 days in advance; fold in the Caesar Kit before serving.
