Blueberry Brain-Power Muffins
Ingredients
- Nonstick cooking spray
- 3 very ripe DOLE® Bananas, peeled
- 2 large eggs
- ½ cup almond butter
- 3 tablespoons maple syrup
- ¾ cup almond flour
- ¼ cup flaxseed meal
- ¼ cup whole wheat flour
- 1 teaspoon apple pie spice
- 1 teaspoon baking soda
- 1 cup DOLE® Blueberries
Directions
- Preheat oven to 350°F; spray a 12-cup standard muffin pan with nonstick cooking spray.
- Mash bananas with the back of a fork in a large bowl; whisk in eggs, almond butter and syrup. Whisk in almond flour, flaxseed meal, whole wheat flour, apple pie spice and baking soda; fold in blueberries and divide into prepared pan.
- Bake muffins 25 minutes or until a toothpick inserted in center of muffins comes out clean; cool 10 minutes, then transfer to a wire rack to cool completely.
