Blended Hawaiian Baked Oats

Ingredients
- Nonstick cooking spray
- 2c gluten free rolled oats
- 3T light brown sugar
- 2tsp baking powder
- 1tsp kosher salt
- 3/4 cup lite coconut milk, canned
- 2 bananas
- 1 egg
- 1 tsp vanilla
- 1/2 cup non fat vanilla greek yogurt
- 1/2 cup diced fresh pineapple
- Chopped pecans, maple syrup, additional banana slices (optional)
Directions
- Prepare an 8-inch square baking dish nonstick cooking spray. Preheat oven to 350F.
- Pulse oats in high power blender until fine powder.
- Add sugar, baking powder, salt, coconut milk, bananas, egg, vanilla and yogurt to blended. Combine until smooth.
- Pour batter into prepared pan. Sprinkle top of oats with pineapple and bake 30-35min.
- Serve oatmeal topped with nuts, syrup or additional bananas if desired!
