Directions

For the oat milk ice cubes: Divide the oat milk into the wells of an ice cube maker and freeze for several hours.

 

For the frozen banana: Peel the banana, cut into slices and also freeze.

 

For the pineapple cubes: Peel the pineapple, cut out the hard central core. Dice 120 g of flesh (cut the rest of the pineapple into thin slices and refrigerate). Put the diced pineapple, orange juice, maple syrup and 50 ml water in a small saucepan, bring to the boil and simmer for 5 minutes until soft. Leave to cool. 

 

For the shake: Place the pineapple cubes, frozen banana pieces, espresso and oat milk ice cubes in a powerful blender and blend until smooth. Immediately divide into pre-chilled glasses. 

 

For the pineapple slice decoration: Chop the espresso beans. Sprinkle over the prepared pineapple slices and arrange on top of the shake. Dust with cinnamon or cocoa and serve.
