The avocado sandwich is a classic: not only is this healthy snack simple to prepare, it also really fills you up. With its delicate nutty flavour, avocado is a splendid base for creating fantastic combinations. Our favourites for a delicious snack experience include crunchy sprouts, spicy radishes and fruity, sweet pineapple.
Directions
Peel and slice the pineapple and then drizzle it with raspberry vinegar and oil. Clean the radishes and slice them thinly. Wash the sprouts.
De-seed and finely chop the chilli. Halve the avocado, remove the stone and use a spoon to take out the flesh. Then mash this using a fork and mix with the lime juice, chilli, salt and pepper.
Spread the mashed avocado over the wholegrain slices of bread. Then cover the slices of bread with pineapple, radishes and sprouts before drizzling with lime juice.
Tips & Tricks
For an extra portion of crunchiness, simply cut a cucumber into small pieces and scatter these over the sandwiches.
