The clusters or “hands” of bananas are cut from the stem, divided into smaller bunches and carefully selected. The bananas must meet strict criteria. Randomly selected fruits go through a complete quality check. Various checks are carried out on both the outside and the inside of the fruit. The bananas are then immersed in a water bath to remove the latex from the banana crowns.
